Thierry Marx,
in a few words
Originally from Paris, Thierry Marx is one of the most iconic chefs of his generation. He trained under some of the greatest names in French gastronomy, such as Claude Deligne, Joël Robuchon, and Alain Chapel. After two years in the French army, he left France to travel abroad and refine his culinary style, visiting Australia, Hong Kong, Thailand, and Japan.
Upon returning to France, he earned his first Michelin star in 1988 at Roc en Val in Tours, followed by a second in 1991 at Cheval Blanc in Nîmes. In 2006, Thierry Marx was named Chef of the Year by the Gault&Millau guide. In 2010, he returned to Paris to take charge of the kitchens and Food & Beverage offering at the new Mandarin Oriental, a 5-star hotel.
With his innovative cuisine, Thierry Marx blends French tradition with Asian influences, playing with textures, flavors, avant-garde shapes, and colors that have earned him renown. His cooking draws inspiration from his many travels, especially Japan, for which he has a true passion both for its gastronomy and its way of life. In February 2023, Thierry Marx fulfilled a dream by opening his own restaurant, ONOR. This project is based on a strong concept: social and solidarity economy.
